question for black velcro

Hello, the more I read about black velcros the more I would like to start my breeding with them,,I have read that these velcros can be a little wild (for the short knife when legal) what do you recommend to cross with cock velcro over what I have read the kelsos are great when legal for s/k do you put velcro(cock) over X(hen) or X(cock) over velcro(hen)..I just want black fowl..thanks
