    Who's eaten gamecock?

Maybe a strange one, but I always wondered what they taste like compared to store-bought. My dad always said, "Tastes like chicken, wat else?" I've heard varied responses that the meat is tough or that its gamey. Anyone know, and if so, how was it cooked when you ate it?

I'm boiling my pullets down to make gumbo & dumpling stock out of meat. Just put it in freezer bags when you need a batch.

Yea that gets old I don't know if you can get the suckers tender even by boiling them I've heard old timers say they never could but you might could pressure cook them that might work.

Don't know how but I've always heard the old timers say if you lost back in the day you had chicken and dumplins.. font know how they cooked it down to make it tender enough to eat though.

    Re: Who's eaten gamecock?

I used to raise a few on a farm walk and the workers there would kill all the cross pullets every year and make tamales. Some of the best I ever had. Once you boil and shred the meat, it doesn't really matter if its a little tough so game chicken meat works good for that.

I take the breast of a 4 or 5 month old pullet. I cut it into chickens strips and fry them. Its the best white meat you will ever eat .

I've eat a truck load of hens and pullets. Even a few stags that were humpback or crooked breasted. And you can fry them when they are a little bigger than a quail. They make great soup, gumbo, chicken spaghetti, tacos or tamallis. Many wonderful meals.

I imagine a few cold ones while you prep it, a few while you cook it, a few while you eat it, and the rest while it digests n itll all go down fine.

You fry pullets up to about 2 pounds. Have to eat any unwanted stags like Del said. No bigger than banty or breast muscle starts to get tough. Best tasting chicken there is and they don't smell like a broiler house while cooking. Meat comes off the bone smooth. You can also use your old hens by feeding them 2 wks. on dry dog feed. They are as easy to skin as a young pullet. Then boil them. Makes best chicken salad because the meat don't get mushy.
Used to BBQ the small stags over hickory-- Serve with ice cold home brew. Way we did it cause thats all we had.

I've heard that. I was also reading a book from the 1930s (Courage: the story of modern cockfighting), and the author said the losers in the U.S. fights he attended were always spoken for and on a dinner table back then. That was in the depression, though it reminded me to ask.

The time/cost trade-off is worth mentioning, I think. In other words, "It's not worth my time for the small amount of money I save." This only holds true, though, if you've got something more profitable to spend that time doing. Otherwise, it's just an excuse for being lazy. I know you were kidding, but I catch myself saying that a lot more the older I get.

Old man Trevor used to make jerky from the breasts of his stags. I tasted it and it was dark kind of like beef.
He and his wife used to have a method for cooking the whole bird. They said that they would never eat a chicken from the store.

Really? Not sure how it works, but what if you run into a bird that's had a dose of strychnine, or maybe been poisoned some way. Would that not go into the meat? Or does it burn out?

Ur right about that. So we are also careful. My fyts are small betting fyts. So not so much with medicine enduced fighters. Still there are some. We noticed it in the soup. But not poisoned cocks. Coz poisoned you already know in the body color. And still we sometimes come across it. We know that there is a medicine involeved when we easily get drunk. Lol.

I grew up in eastern Kentucky in the 50s. Our chickens were one of the most important part of our diet. Game chickens. Best tasting fried chicken you can get. Fat hens great for dumplings.
