    Best way to cook a game hen?

    Got a bunch of crosses that need to be off the feed bill.
    Can't just nuke em so I gotta eat em.

    Need opinions on the best way to cook them please.

    Include seasonings as well.

    they are tough , even boiled they are stringy . at best just pop the breast out .. the trick is in how you brine . dry brine with just salt and leave on a plate in the fridge 4-24 hrs . season with garlic and paprika ... 350 degrees for 10-12 minutes poer side , make sure to smear a little oil on em .. finish in a hot pan to get em golden

    liquid brine is a bowl of water with a teaspoon of balsamic vinegar , 1/2 cup olive oil .. dash of lemon juice and smashed garlic overnight .. cook same

    If they hens or even over 6-8 months old ya just about have to put them in a slow cooker for a day.. Seasoning is to each persons taiste. They make great chicken spaghetti. If you want to fry or grill them you need to dress them when they are just a few months old, a pound or so. We eat many pullets and a few hens that I cull. My dad always boiled water and plucked them as he said the skin was the taistes part. I just skin them as it's fast and easy.

    My marinade:1 Pint oil, 1quart vinegar, 2quarts water,1 box Bell's Poultry Seasoning. I marinade 2 days for anything tough. A sealed container works so you can shake it up a few times to keep mixed. BBQ. Eat the breasts and thighs. If they are still tough or I have a lot I dice them up for chicken salad. The carcasses make very good BBQed chicken stock. Grilled chicken salad and cheese sandwiches work for me. Tom

    I use the legs and thighs for soup stock and chicken and dumplings. I debone the breast, butterfly each side, put between plastic and pound to tenderize. Marinate and grill. Also works for frying for different things just pound it down thinner for that.

    I usually butcher about 40 pullets a year, I do it before they are 6 months old. I use my duck plucker, and cook them in a rice and gravy. I tried eating stags years ago they were to tough, I ended up deboning and ground them in chicken salad. And the sandwiches was tough lol

    Tried boiling Aseel when I first got into them, boiled all day and they were like rubber so tossed it never tried again

    Put a beer can in them bake standing up if you dont like beer use a can with water and bolion probably spelled that wrong rub down with favorite seasonings please tin foil in neck hole to trap steam 325 hour then check done when golden brown

    I like to de-bone the breast, remove legs and thighs. I bake them in the oven with bacon strips laid on top. They come out pretty good. Tougher than KFC, but a good taste and texture.

    You should try that Chupacabra rub by 2 Gringos, it is the best dry rub I have found, Several good recipe's above. Got to cook low heat and all day covered. Gamefowl are very tough.

    If you're cleaning up your yard to cut feedbill, pen hens of all ages. Feed 2 wks with dry dogfeed. They will skin like a 5 mo. old pullet. Stew them about all day. Debone them. Dice them up small to make chicken salad or mix some with onion, bell pepper or hot peppers. Fry like a crab cake. The chicken salad won't be mushy. I used to butcher 6 at a time and work them up. Great for dog feed and actually cheaper. if you have small dogs. Dry dog feed will also make old, veteran hens lay.

    I like making soup out of my extras/culls. “Tinolang manok” as we call it in PI. Cut to pieces. It’s easier to show than to explain how to cook it. Lol. Yummy soup.

    LOL, Shamo are the same. Boil them for 1/2 hour then add an old boot and boil for another 6 hours. Throw the shamo out and eat the boot.

    Turbo chicken using turbo oven is the best. Meat will be tender regardless of the hen's age.

    only good if slow cooked / simmered for a long time (season the broth for your noodles)… too tough to grill, roast or stir-fry... but I heard that (have not tried) if you submerge them in ice water for a 3 - 4 hours - I would do 8 hours to be sure - they'll get tendered like a broiler... Sounds strange but it may work.

    Tenderizing is breaking down proteins .. Hammer , aging , acid ,enzymes , cornstarch .. Chicken is usually pounded a little . Corn starch and vinegar is called velveting like a Chinese restaraunt . Ice bath is used for 4-5 days on deer , rabbit .. Pork and chicken are different but maybe .. The grain of chicken meat needs to be broken with a hammer or it's still tender but stringy

    Pressure cooker make those chicken meat tender then you can cook it the way you want.

    For easy filipino adobo you need soy sauce garlic pepper and vinegar you can also use onions on it. Mix them together then boil try taste when boiling for flavor then add the vinegar never stir after adding vinegar the it will make it sour. Simmer until the sauce thickens. Then its ready. You can also check how its done on youtube.

    They are similar to wild game birds like pheasants or grouse in both taste and tougher meat because they are so active. Recipes for wild birds are easily found with an internet search and they will work well for game chickens.

    i like mine boiled and drained a few times then baked in the oven seasoned with black pepper and sage and surrounded by carrots potatoes and onions. makes a fine meal....now i need to go hit the creeks lol
